GIDDY-UP GARDEN DUKKAH IS A MIDDLE EASTERN INSPIRED SPICE AND NUT BLEND THAT WE’VE ADDED A LITTLE SEASONAL YEEHAW TOO, STRAIGHT FROM THE GARDENS OF GARTUR. ADD TO DIPS, SOFT CHEESES, SALADS OR OVER SOUPS. ADD TO OIL FOR DIPPING BREAD OR SCATTER OVER YOUR ROAST VEG.

Dukkah is a Middle Eastern inspired but and spice blend. Cumin, fennel and coriander seeds are toasted alongside nuts and then tossed with herbs and slung over the most basic veg, cheese or meat to transform them into something magical.

Traditionally dukkah is less of a recipe and more of the process - “dukkah” actually means 'to pound'. The exact contents of the blend changes with the season and the area - hazelnuts, pistachios and walnuts are used, sometimes  

 Our dukkah takes that to heart. Every batch of our dukkah is a bit different. We mix the dried spices and nuts with a selection of dried herbs and flowers so every batch reflects the seasons.

Batch 004 celebrates spring. It has gorse flowers and nettles from the woods and mind from the garden. It makes it fresh and floral, with hints of sweetness coming through from the gorse.

INGREDIENTS: CORIANDER SEEDS, CUMIN SEEDS, FENNEL SEEDS, WALNUTS, SEA SALT, SEASONAL DRIED GREENS, DRIED MINT, SEASONAL DRIED FLOWERS

Using dukkah:

  • sprinkle into rapeseed oil and use for a dip for bread

  • use on top of soups to add extra crunch and flavour

  • mix into yoghurt for Middle Eastern inspired dip

  • zhuzh up roast veggies, chicken or fish but sprinkling dukkah over them just as they come out of the oven
